RASPBERRY SWIRL CHEESECAKE (LOW FAT LOW SUGAR BUT DON'T TELL 'EM)

Cranberry puree:

Raspberry Swirl Cheesecake

Ingredients:
1 cups fresh cranberries
16 oz. frozen raspberries
2/3 cups Splenda
2/3 cups fresh orange juice
2 tablespoons grated orange peel
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
4 teaspoons vanilla extract

Directions:
Combine all ingredients except vanilla in heavy large saucepan.  Cook over medium heat until mixture thickens, stirring occasionally, about 5 minutes.  Cool slightly.  Transfer to processor.  Add vanilla.  Puree until smooth.  Strain into medium bowl.  Separate 1/2 cup and use in the cran-raspberry compote.  Cover with plastic.  Refrigerate at least 6 hours or freeze for 1.5 hours.

SKINNY POMEGRANATE BELLINI

Hey if you are going to drink, might as well have this antioxidant-loaded sparkler to help fight off those pesky free radicals. Fresh pomegranates are some of the best superfoods available so drink to that!

Ingredients:
Crushed ice
¼ cup Grand Marnier (orange-flavored liqueur)
1 cup pomegranate juice
20 ounces Champagne
8 thin orange slices
Fresh pomegratate arils (seeds)

Directions:
Fill martini shaker halfway with crushed ice.  Add Grand Marnier and pomegranate juice; shake well to chill.  Strain into 8 glass flutes.  Add 5 tablespoons Champagne per glass.  Garnish with orange slices and a few pomegranate arils (seeds) and serve immediately. Serves 8 (Serving size about ½ cup.)

CAPRESE SKEWERS

Ingredients:
1 part skim mozzarella ball
2 grape tomatoes
Olive oil
Balsamic vinegar
Kosher salt
Fresh cracked pepper



Directions:
On toothpicks, place organic basil, grape tomato, and ½ a ball of part skim mozzarella.  Drizzle olive oil and balsamic vinegar for taste.
